Method
Preparation of Chicken
- 1
Prepare the Chicken
Preheat your oven to 375°F (190°C). Take the chicken breasts and gently pound them to an even thickness using a meat mallet or rolling pin.
- 2
Season the Chicken
Season both sides of the chicken breasts with salt and black pepper.
- 3
- 4
Bread the Chicken
Dredge each chicken breast in flour, shaking off the excess. Then dip it into the beaten eggs, and finally coat it with breadcrumbs, pressing down to adhere.
Cooking the Chicken
- 5
Heat Oil
In a large skillet, heat the olive oil over medium heat until hot but not smoking.
- 6
Cook Chicken
Add the breaded chicken breasts to the skillet and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and place on a paper towel to drain excess oil.
Assembling and Baking
- 7
Assemble the Dish
In a baking dish, spread a thin layer of marinara sauce at the bottom. Place the chicken breasts on top.
- 8
Add Toppings
Spoon marinara sauce over each chicken breast, then sprinkle with mozzarella and parmesan cheese. Add fresh basil on top.
- 9
Bake
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
