Begin by harvesting ripe Pinot Noir grapes. Ensure to select only the best grapes to ensure quality.

Harvesting the Grapes

Remove stems and crush the grapes to release their juices. You can do this by hand or using a crusher.

Crushing and Destemming

Transfer the crushed grapes to a fermentation vessel. Add water, sugar, and yeast. Stir gently to mix, cover the vessel, and allow fermentation to begin. This process typically takes 7-10 days.

After fermentation, press the mixture to extract the wine from the solids. Use a wine press if available.

Pressing

Transfer the pressed wine into oak barrels or stainless steel tanks for aging. This can take anywhere from 6 months to 2 years depending on the desired flavor profile.

Once aging is complete, carefully siphon the wine into clean bottles, avoiding sediment. Seal the bottles with corks.

Pinot Noir Grapes

Carefully hand-pick ripe Cabernet Sauvignon grapes. Remove any leaves or stems, and crush the grapes to release the juice.

Harvest and Prepare Grapes

Place the crushed grapes in a fermentation vessel. Add water and sugar, stirring until dissolved. Sprinkle the yeast evenly over the mixture. Cover the vessel with a cloth and let it sit for about 7-10 days, stirring daily.

After fermentation, press the mixture to separate the liquid from the solids. Collect the liquid (must) in a clean container.

Add oak chips to the must for flavor and aroma. Transfer the liquid to a secondary fermentation vessel, seal it, and let it age for at least 6 months in a cool, dark place.

After aging, if desired, add a small amount of sulfur dioxide for preservation. Carefully siphon the wine into sterilized bottles, leaving some space at the top. Seal with corks.

Allow the wine to further age in the bottle for at least a few months before tasting. Serve chilled or at room temperature.
