Whole Spread (two tamales) with fritos, beans, chopped beef, cheese & onions

Method

Preparation and assembly

    Prepare tamale base

    If using masa dough, combine masa harina with half the stock and oil to form a soft dough. Add remaining stock gradually until mixture is smooth and spreadable. Season with salt. If using prepared tamales, shred or chop into bite-sized pieces.

    Warm fillings

    In a skillet over medium heat, warm the chopped beef with a splash of stock until heated through. Add chopped onion and cook until translucent. Mix in refried beans to loosen slightly.

    Prepare toppings and crunch

    Crumble or crush Fritos into a light crumb. Shred cheese and set aside with salsa and lime wedges ready for serving.

    Assemble tamales with toppings

    Spread a light layer of warm refried beans on each tamale piece. Top with the warmed chopped beef mixture, sprinkle with cheese, then add a handful of Fritos for crunch. Finish with diced onions and a drizzle of salsa if using.

    Crisp the edges (optional)

    In a clean skillet, heat a thin layer of oil over medium heat. Add assembled pieces and cook briefly on both sides to lightly crisp the edges and meld flavors.

    Plate two tamale pieces per serving, with additional beans on the side and a sprinkle of onions. Serve with lime wedges and salsa if desired.
