In a large bowl, mix masa harina with warm broth gradually until a smooth, thick batter forms. Fold in melted butter, salt, and ancho chili powder. Adjust with additional broth for a spreadable yet firm consistency.

Stir in shredded chicken (or jackfruit) and chopped cilantro until evenly distributed.

Assemble tamales
If using corn husks, spread a 3-4 tablespoon layer of masa onto the center of each husk, add a spoonful of filling, then fold the sides and tie with a strip of husk if desired. If using parchment, place a dollop on the center and fold into a rectangular packet. Repeat until all masa is used.

Arrange tamales in a steamer, seam side down. Steam over simmering water for 45-60 minutes, or until masa is firm and separates easily from the husk. Let rest 10 minutes before serving.
