    Masa preparation

    In a large bowl, whisk together masa harina, baking powder, and salt. Gradually whisk in warm water or vegetable broth and oil until a smooth, thick batter forms. Let rest 10 minutes to hydrate.

    Bean filling

    Drain and rinse black beans if using canned. In a skillet over medium heat, simmer beans with canned tomatoes, corn, and chopped cilantro. Stir in lime juice, salt to taste, and heat until warmed through and well combined.

    Slaw

    In a separate bowl, whisk together mayonnaise, lime juice, apple cider vinegar, sugar, and salt. Add shredded cabbage, carrot, and slaw mix; toss to coat evenly. Chill for at least 15 minutes.

    Fried/fries option (optional)

    If choosing fries, cut potatoes into sticks, parboil 5 minutes, drain, dry, and fry in hot oil until golden. Season lightly with salt.

    Assemble tamales (optional if using masa for tamales)

    Spread a thin layer of masa on a cornhake or banana leaf if available. Place a spoonful of bean filling in center, then fold and secure. Steam or bake until masa is set and filling is heated through (about 25–35 minutes if steamed; longer if baked).
