Ribs with slaw and beans

    Prepare ribs

    Pat ribs dry, trim any excess fat, and rub with olive oil, then mix paprika, garlic powder, onion powder, brown sugar, salt, and pepper. Rub evenly over all surfaces and let rest 15 minutes.

    Create barbecue glaze

    Stir together apple cider vinegar and barbecue sauce in a small bowl to form a glossy glaze.

    Rack preparation and cooking setup

    Preheat oven to 300°F (150°C) or set grill for indirect medium heat. Place ribs on a foil-lined sheet tray, bone-side down.

    Bake ribs (or grill)

    Cover ribs with a second sheet of foil and bake for 2.5–3 hours until meat pulls away from bone. If grilling, cook for about 1.5–2 hours over indirect heat, brushing with glaze every 20 minutes.

    Finish with glaze

    Uncover (careful with steam), brush ribs with glaze, and return to heat for 5–10 minutes to set the glaze.

    Prepare slaw

    In a large bowl, whisk mayonnaise, sour cream, lime juice, and a pinch of salt. Toss with coleslaw mix and chopped cilantro. Chill until ready to serve.

    Beans

    In a pot, heat olive oil over medium. Sauté chopped onion and garlic until translucent. Stir in cumin, then add black beans with their liquid. Simmer 10–15 minutes to marry flavors. Adjust salt to taste.

    Assemble and serve

    Slice ribs, serve with a generous scoop of slaw and a portion of beans. Optional extra barbecue sauce on the side.
