    Prep ribs and dry rub

    Remove membrane from the back of the ribs. Mix dry rub ingredients in a bowl. Generously coat both sides of the ribs with the rub, pressing to adhere. Let sit 20 minutes at room temperature or refrigerate up to 4 hours.

    Slow-cook ribs

    Preheat oven to 275°F (135°C). Place ribs on a rack over a sheet pan. Cover with foil and bake for 2.5–3 hours until tender. Remove foil in the last 15 minutes if you like a crust.

    Finish ribs with sauce (optional)

    Brush ribs with barbecue sauce and broil or grill for 2–3 minutes per side to set the glaze, or serve without sauce.

    Prepare fries

    Scrub potatoes and cut into even sticks. Soak cut potatoes in cold water for 30 minutes to remove excess starch. Drain and pat dry thoroughly.

    Double-fry fries

    Heat oil to 325°F (165°C). Fry potatoes in batches for 3–4 minutes until pale and just tender. Remove and drain. Increase oil temperature to 375°F (190°C). Fry again in batches for 2–3 minutes until golden and crisp. Drain on paper towels and immediately season with salt and pepper.

    Serve

    Slice or pull ribs into portions. Plate with hot fries on the side. Offer extra barbecue sauce for dipping if desired.
