Method
Preparation
- 1
Soak corn husks
Place dried corn husks in a large bowl and cover with hot water. Weigh them down with a plate to keep submerged. Let soak for 30 minutes until pliable, then drain and pat dry.
- 2
Prepare masa dough
In a large bowl, whisk masa harina with 1 cup warm water and 1 cup cold water until smooth. Add 2 tbsp vegetable oil and 1 tsp tamal seasoning (or salt). Mix well. Let rest 10 minutes to hydrate.
- 3
Flavor beans (optional)
In a small pan, warm the cooked pinto beans with a pinch of salt. Mash slightly to a chunky consistency if desired. Combine with mashed pinto beans to create a cohesive filling, or keep as separate fillings if preferred.
- 4
Prepare bean fillings
Divide the bean mixture into two portions. One portion can be mashed smooth for a spread, the other left chunky for texture inside the tamales.
Assembling tamales
- 5
Spread masa on husks
Pat husks dry. Spread about 2 to 3 tablespoons of masa onto the center of each husk, forming a thin rectangle leaving about 1 inch of husk at the bottom to fold.
- 6
Add fillings
Spoon a line of bean filling (about 2 tablespoons) down the center of the masa. If using two types of beans, place one type on top of the other or layer them lightly.
- 7
Roll tamales
Fold the sides of the husk toward the center and roll from the bottom up, enclosing the filling. Tie with a thin strip of husk or leave as is if flexible.
- 8
Arrange for steaming
Place rolled tamales upright in a steamer basket, open end up. Ensure they are snug but not packed too tightly.
Cooking
- 9
Steam tamales
Fill bottom of steamer with water just below the basket. Bring to a boil, reduce to simmer, and steam tamales for 60 to 90 minutes, checking water level occasionally. Tamales are done when masa separates from the husk and is firm.
- 10
Rest and serve
Remove tamales from steamer and let rest 10 minutes. Unwrap carefully and serve with warm salsa or pico de gallo and shredded cheese if desired.
