Prepare fillings: If using pre-cooked meat, shred and season lightly with salt and pepper. If using raw meat, cook until done and shred. Set aside.

Prepare masa dough: In a large bowl, whisk masa harina with water or broth, melted lard, baking powder, salt, chili powder, oregano, cumin, garlic powder, and black pepper until smooth and no lumps form. The dough should be light and slightly fluffy.

Assemble corn husks: Drain and pat dry soaked husks. Tear a few into thin strips for tying if desired. Spoon about 2 to 3 tablespoons of masa onto the center of each husk and spread into a rectangle, leaving a border at the sides for folding.

Add filling: Spoon a line of protein filling down the center of the masa rectangle. If using cheese, reserve a portion to top after rolling.

Roll tamales: Fold sides of the husk over the filling, then fold the ends and secure with a strip of husk or kitchen twine. Place seam side down on a steamer rack.

Steam: Bring a pot of water to a simmer in a steamer. Place tamales in steamer, cover, and steam for 60 to 90 minutes, checking water level occasionally and adding more water as needed. Tamales are done when the masa separates cleanly from the husk and the filling is hot.

Serve: Let stand 5 minutes, then unwrap and serve with chili sauce or enchilada sauce. Top with melted cheese if desired.
