Nacho Fiesta Kitchen – Half Order (one tamale with beans)

Method

Half Order (one tamale with beans) - Preparation and Assembly

  1. 1

    Prepare fillings

If using canned pinto beans, drain and rinse. In a skillet, warm the vegetable oil over medium heat. Sauté the diced onion until translucent, about 2–3 minutes. Add minced garlic and cook for another 30 seconds until fragrant.

  2. 2

    Spice and simmer beans

Add pinto beans to the skillet (or use pre-mashed/pureed beans). Stir in tomato sauce, ground cumin, smoked paprika, salt, and black pepper. Simmer for 5–7 minutes, mashing slightly with a spoon to reach a chunky puree. If using refried beans, combine with a splash of water to loosen to a spreadable consistency and warm through.

  3. 3

    Prepare tamale filling

Coat the tamale with a light layer of warm sauce left from simmering beans or plain tomatillo/rosemary sauce if available. If making from scratch, split the tamale carefully and place a spoonful of bean mixture inside (optional) for extra richness.

  4. 4

    Plate assembly

Assemble plate: lay tamale on plate, spoon the beans alongside or inside the tamale, and drizzle with any remaining sauce. Top with chopped cilantro if desired and a sprinkle of crunchy toppings for texture.
