    Prepare the Shrimp or Oysters

    If using shrimp, peel and devein. If using oysters, shuck them and rinse under cold water.

    Coat the Seafood

    In a bowl, mix flour and Cajun seasoning. In another bowl, beat the eggs. In a third bowl, place cornmeal. Dip each shrimp or oyster first in flour, then in egg, and finally coat with cornmeal.

    Fry the Seafood

    Heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry the coated shrimp or oysters in batches until golden brown, about 3-4 minutes. Remove and drain on paper towels.

    Assemble the Po-Boy

    Slice the Gambino's French bread lengthwise, leaving one side attached. Spread mayonnaise on both sides of the bread. Layer with lettuce, tomato slices, pickles, and the fried shrimp or oysters.

    Serve

    Close the sandwich, slice in half if desired, and serve immediately.
