Prepare the Ingredients
Start by cooking the bacon until it's crispy. Once cooked, remove it from the pan, crumble it, and set aside. Reserve a tablespoon of bacon grease for frying the oysters.

Bread the Oysters
Dip each oyster first into the flour mixture, then into the egg mixture, and finally coat it with the flour mixture again.

Fry the Oysters
Heat the oil in a deep pan over medium-high heat. Once the oil is hot, carefully add the breaded oysters. Fry until they are golden brown, about 2-3 minutes per side. Remove and place on paper towels to drain excess oil.

On a serving plate, place the fried oysters. Top with crumbled bacon, pickled red onions, cherry tomatoes, and blue cheese crumbles.
