    Soak the Catfish

    In a large bowl, soak the catfish fillets in buttermilk for at least 30 minutes. This will help tenderize the fish and add flavor.

    Prepare the Coating

    In a separate bowl, combine cornmeal, all-purpose flour, cajun seasoning, salt, and black pepper. Mix well to ensure even seasoning.

    Heat the Oil

    In a large skillet or deep fryer, heat the oil over medium-high heat until it's hot (about 350°F or 175°C).

    Coat the Catfish

    Remove the catfish fillets from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, ensuring they are fully coated.

    Fry the Catfish

    Carefully place the coated catfish fillets in the hot oil. Fry for about 5-7 minutes on each side or until golden brown and cooked through. Use a thermometer to ensure an internal temperature of 145°F (63°C).

    Remove the fried catfish from the oil and let them drain on paper towels. Serve hot with mac & cheese, turnip greens, and cole slaw.
