    Prepare the Blackened Redfish

    Pat the redfish fillets dry with paper towels. Rub Cajun seasoning, salt, and black pepper all over the fillets.

    Cook the Fish

    In a large skillet, heat olive oil over medium-high heat. Add the seasoned redfish fillets and cook for about 3-4 minutes on each side until they are blackened and cooked through. Remove from heat and let rest.

    Make the Slaw

    In a large bowl, combine shredded cabbage, diced roasted red peppers, crumbled feta cheese, sliced red onion, and chopped parsley. In a separate small bowl, whisk together olive oil, red wine vinegar, honey, salt, and black pepper. Pour the dressing over the slaw and toss to combine.

    Assemble the Dish

    To serve, place a blackened redfish fillet on the bottom half of each brioche bun. Top with a generous portion of the feta and roasted red pepper slaw and cover with the top half of the bun.
