Peel and finely chop the onion. Peel and thinly slice or mince the garlic cloves.

Sweat onion and garlic
Heat a 4- to 5-quart pot over medium heat. Add 1 tablespoon (about 15 ml) of neutral oil or a small knob of butter if you like (optional, not counted as one of the three ingredients). Once warm, add the chopped onion and cook, stirring occasionally, until softened and translucent, about 6–8 minutes. Add the garlic and cook until fragrant, about 30–45 seconds, taking care not to brown it.

Add stock and simmer
Pour in the 6 cups of stock, scraping any browned bits from the bottom of the pot. Bring to a gentle simmer over medium-high heat, then reduce heat to maintain a low simmer. Simmer uncovered for 8–10 minutes to let the flavors meld.

Season and serve
Taste the soup and add up to 1 teaspoon salt and 1 teaspoon black pepper (start with half the salt if using regular stock). Stir, simmer 1 minute, then turn off the heat. Ladle into bowls and serve hot. Optional: garnish with a drizzle of olive oil, fresh herbs, croutons, or grated cheese (not included in ingredients list).
