    Preheat and prepare

    Preheat oven to 160°C (325°F). Line a rimmed baking sheet with foil and place a wire rack on top. If using a grill later, preheat grill to medium-low for finishing (optional).

    Trim and season

    Pat the ribs dry with paper towels. If the membrane on the bone side is still attached, loosen an edge with a butter knife and pull it off. Rub the ribs all over with 1 tablespoon vegetable oil. In a small bowl combine 1.5 tbs kosher salt, 1 tsp black pepper, 2 tbs brown sugar, 1 tsp smoked paprika, 1 tsp garlic powder and 1/2 tsp onion powder. Rub this dry spice mix evenly over both sides of the ribs.

    Bake low and slow

    Place the seasoned ribs meat-side up on the prepared rack. Cover tightly with foil and bake in the preheated oven for 2 to 2 1/2 hours (depending on thickness) until meat is tender and pulls back from the bones about 1/4–1/2 inch and a knife slides in easily. Internal temperature will be around 85–95°C (185–203°F) when tender.

Homemade BBQ Sauce

    Make the sauce

    While ribs are baking, combine 3/4 cup ketchup, 2 tbs apple cider vinegar, 2 tbs brown sugar, 1 tbs honey, 1 tbs Worcestershire sauce, 1 tsp soy sauce, 1 tsp Dijon mustard, 1/2 tsp smoked paprika, 2 minced garlic cloves, 1/2 tsp black pepper and 1/2 tsp chili flakes or a dash of hot sauce (if using) in a small saucepan. Bring to a gentle simmer over medium heat, stirring occasionally. Reduce heat to low and simmer 8–10 minutes until slightly thickened. Taste and adjust salt, sweetness or acidity. Remove from heat and set aside.

    Glaze and caramelize

    When ribs are tender, remove from oven and increase oven temperature to 220°C (425°F) or prepare a hot area on the grill. Brush a generous layer of the prepared BBQ sauce over the top of the ribs. Return to the oven (uncovered) or place on the grill over direct heat and cook 8–12 minutes until sauce is bubbling and caramelized — watch carefully to avoid burning. For an extra sticky finish, brush a second thin coat of sauce and return for 1–2 minutes.

    Rest and slice

    Remove ribs from oven or grill and let rest on a cutting board for 5–10 minutes. Using a sharp knife, slice between the bones into individual ribs or into portions.

    Serve

    Transfer ribs to a platter, sprinkle with chopped parsley and serve with lemon wedges and extra BBQ sauce on the side.
