Trim and slice
Trim the cucumber ends. If using English cucumber, you can leave the skin on — if waxed, peel lightly. Cut each cucumber lengthwise into quarters, then slice each quarter into 2–3 inch long thin strips (matchstick-style). Place the strips in a large bowl.

Salt and draw out water
Sprinkle 1 tsp salt over the cucumber strips and toss to coat. Let sit 10 minutes to draw out excess water, then gently squeeze handfuls of cucumber over the sink or a bowl to remove released liquid. Discard liquid. This keeps the final salad crisp and prevents dilution of the marinade.

Combine marinade
In a separate small bowl or jar, whisk together rice vinegar, light soy sauce, granulated sugar, sesame oil, mandarin zest, mandarin juice, ground Sichuan peppercorns, dried red chile flakes, and garlic slices until sugar begins to dissolve. Taste and adjust: it should be tangy with a touch of sweet, fragrant with mandarin, and mildly spicy.

Marinate cucumbers
Pour the marinade over the drained cucumber strips and add the sliced green onion. Toss thoroughly so every strip is coated. Let the cucumbers sit at room temperature for at least 15–20 minutes, or refrigerate for 30–60 minutes for deeper flavor. Stir or toss once or twice during this period to redistribute marinade.

Before serving, taste and adjust seasoning: add a pinch more salt, a splash of mandarin juice, or a teaspoon of soy if needed. Transfer the cucumbers to a serving plate. Sprinkle toasted sesame seeds and chopped cilantro over the top. If you like extra heat or gloss, drizzle 1 tsp chili oil over the salad.

Serve chilled or at cool room temperature as an appetizer or palate-cleansing side. Leftovers keep in an airtight container in the fridge for up to 2 days (cucumbers will soften over time).
