Prepare Cucumbers

Wash and slice
Rinse cucumbers under cold water and pat dry. Trim the ends. Cut cucumbers into 1/8–1/4-inch thick strips: either lengthwise into long matchsticks (for strips) or on the diagonal into oblong slices, depending on presentation. Place the cut cucumbers in a colander or large bowl.

Optional crisping: sprinkle 1/2 tsp kosher salt over the cucumber strips and toss gently. Let sit 10 minutes to draw out excess water, then gently rinse and pat dry. This yields crisper pickles but can be skipped for a quicker prep.
Make Pickling Brine

Combine water, rice vinegar, granulated sugar, and 1 tsp kosher salt in a small saucepan. Add Mandarin zest, Mandarin juice, thinly sliced ginger, Sichuan peppercorns (if using), whole black peppercorns, and red pepper flakes.

Bring the mixture to a gentle simmer over medium heat, stirring until the sugar and salt dissolve, about 2–3 minutes. Remove from heat and let the brine cool to warm (about 10 minutes). Taste and adjust: it should be balanced sweet, tangy, and slightly citrusy.
Assemble & Marinate

Place the prepared cucumber strips into a clean glass jar or airtight container. Tuck the thin Mandarin slices/segments and sliced ginger among the cucumbers so the citrus and ginger flavor the vegetables evenly.

Pour the warm (not boiling) pickling brine over the cucumbers, making sure the liquid fully covers them. Press down gently with a spoon to remove any trapped air. If needed, add a little extra vinegar or water in equal parts to cover.

When ready to serve, drain the cucumbers from the brine slightly, reserving a tablespoon of brine to finish if desired. Toss the drained cucumber strips with 1 tsp sesame oil and the fresh cilantro or mint leaves.

Arrange on a small plate or bowl. Garnish with the thin Mandarin slices distributed on top and an extra pinch of red pepper flakes or a few whole peppercorns for visual contrast. Serve chilled as an appetizer or palate cleanser.
