Prepare pot
Place 6 cups of water in a medium pot and bring to a rolling boil over high heat.

Salt the water
Add 1 tablespoon kosher salt to the boiling water. This seasons the edamame from the inside as it cooks.

Cook edamame
Add 1 cup of fresh or frozen edamame pods to the boiling, salted water. Return to a boil and cook until pods are tender and easily release beans when squeezed, about 3–5 minutes for fresh and 4–6 minutes if frozen. Taste one pod to confirm doneness.

Drain and cool briefly
Drain the edamame in a colander and shake off excess water. Let sit for 1 minute to stop cooking but serve while still warm.

Finish and season
Transfer edamame to a bowl. While warm, toss with a pinch (about 1 teaspoon) of coarse sea or flaky salt. If using, drizzle 1 teaspoon toasted sesame oil and sprinkle up to 1 teaspoon red pepper flakes, tossing to coat evenly. Squeeze lemon to taste over the pods if desired.

Serve
Serve immediately as an appetizer or snack. To eat, squeeze or bite beans from pod and discard pods.
