Crispy Noodles

Prepare noodles
Break the dried noodles into 3–4 inch lengths so they fit easily into the pan. If using thicker noodles, separate gently with your fingers so pieces are loose.

Heat oil
Pour 1 cup of oil into a large heavy-bottomed skillet or wok so oil depth is about 1/2 inch. Heat over medium-high until oil registers 350°F (175°C) or shimmering and hot but not smoking. (If you don't have a thermometer, test with a small noodle piece — it should sizzle immediately.)

Fry noodles in batches
Working in small batches to avoid overcrowding, add a handful of broken noodles to the hot oil. Fry 20–40 seconds, stirring gently, until they puff up, turn golden and crisp. Use a slotted spoon to transfer to a paper towel–lined tray. Sprinkle lightly with 1/3 tsp salt while hot. Repeat until all noodles are crispy. Let cool completely; they will continue to crisp as they cool.
Tossing Sauce

Whisk together soy sauce, rice vinegar, sesame oil, brown sugar, and chili garlic sauce in a small bowl until sugar dissolves and sauce is uniform. Taste and adjust — add up to 1 tsp more rice vinegar if you want brighter acidity or up to 1 tsp more sugar to mellow saltiness.

In a large mixing bowl, combine sliced green onions, shredded carrot, red bell pepper, chopped cilantro, and toasted sesame seeds. If using cooked protein (chicken or tofu), fold it into the vegetables now so it warms slightly when combined with the hot noodles.

Just before serving, pour the tossing sauce over the vegetable mixture and toss to coat evenly.

Add the cooled crispy noodles to the bowl and toss gently but quickly to combine — you want the noodles to remain crisp. If preparing ahead, keep noodles separate and combine at the last moment to preserve crunch.

Taste and season with remaining salt if needed. Transfer to a serving platter or individual bowls. Sprinkle with crispy fried shallots (if using) and extra sesame seeds.
