Crab Filling

Prepare crab
If using lump crab, pick through for shells and flake into small pieces. If using imitation crab, finely chop into small bits so it blends well with the cream cheese.

In a medium bowl, combine the softened cream cheese, chopped crab, sliced green onions, soy sauce, sesame oil, sugar, garlic powder, white pepper, and lime juice (if using). Mix thoroughly until smooth and evenly combined. Taste and adjust seasoning (more soy for saltiness, sugar for balance).

Transfer filling to a small bowl and refrigerate for 10–15 minutes to firm slightly; this makes filling easier to handle when assembling wrappers.

Set up an assembly area with a damp kitchen towel or small bowl of water and the beaten egg for egg wash. Lay out wonton wrappers on a clean surface.

Place about 1 teaspoon of the chilled crab filling in the center of each wonton wrapper. Do not overfill — about a level teaspoon per wrapper is enough for a small, crisp rangoon.

Lightly brush the edges of the wrapper with beaten egg (or water). Fold the wrapper in half diagonally to form a triangle, pressing the edges to seal completely and remove air. For a traditional pouch shape, bring the two opposite corners of the triangle together and press to seal, creating a small purse. Make sure all seams are well sealed to prevent oil ingress.

Pour oil into a deep, heavy-bottomed skillet or pot to a depth of about 2" (or use a deep-fryer) and heat to 350°F (175°C). If you don't have a thermometer, test the oil by dropping a small piece of wrapper in: it should sizzle and brown gently within 30–45 seconds.

Work in batches to avoid overcrowding. Carefully lower 6–8 rangoons (depending on pot size) into the hot oil using a slotted spoon or spider. Fry, turning occasionally, until golden brown and crisp, about 1.5–3 minutes per batch depending on size and oil temperature.

Remove rangoons with a slotted spoon and drain on a paper towel-lined plate or wire rack. Let cool 1–2 minutes before serving — filling will be hot.
Dipping Sauce (optional)

Place sweet chili sauce or sweet-and-sour sauce in a small serving bowl. Stir in soy sauce if you want a slightly saltier, deeper flavor. Serve alongside warm rangoons.
