Beef and Marinade

    Prepare the beef

    Trim excess fat from the steak and pat it dry with paper towels. Cut the steak across the grain into 1/2-inch cubes so the finished bites are tender.

    Make the marinade

    In a medium bowl, whisk together soy sauce, rice vinegar, olive oil, brown sugar, minced garlic, grated ginger, black pepper, and sesame oil until sugar dissolves and mixture is uniform.

    Marinate

    Add the beef cubes to the marinade and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes and up to 4 hours. (If you must, 15 minutes works but yields less flavor.)

Skewers & Grilling

    Prep skewers

    If using wooden skewers, soak them in warm water for 20–30 minutes to prevent burning. If using metal skewers, no soaking is needed.

    Thread the beef

    Thread 6–8 beef cubes onto each skewer, leaving a little space between pieces so heat circulates. You should have four skewers total.

    Heat grill or broiler

    Preheat an outdoor grill to medium-high (about 400°F / 200°C) or set oven broiler to high and position rack 6 inches from heat. Lightly oil the grill grates or brush oil on the meat to prevent sticking.

    Cook the skewers

    Grill or broil the skewers 2–3 minutes per side for medium-rare to medium (internal beef temperature about 130–140°F / 54–60°C), turning once or twice so all sides develop a light char. Total cooking time 6–9 minutes depending on desired doneness and cube size.

    Transfer cooked skewers to a plate and let rest 3–5 minutes so juices redistribute.

Dipping Sauce & Finishing

    Make dipping sauce (optional)

    Whisk together hoisin sauce, Sriracha, water, and lime juice in a small bowl until smooth. Adjust heat and consistency with more Sriracha or water as desired.

    Arrange skewers on a serving platter. Sprinkle sliced green onions and sesame seeds over the beef. Serve with lime wedges and the dipping sauce on the side.
