Prepare ribs
Preheat oven to 300°F (150°C). If ribs have a membrane on the bone side, slide a small knife under the membrane at one end and peel it off using a paper towel for grip.

Dry rub & oil
Pat ribs dry with paper towels. In a small bowl combine kosher salt, black pepper, smoked paprika, garlic powder, and onion powder. Rub olive oil over both sides of the ribs, then evenly massage the dry rub into both surfaces.

Slow roast
Place ribs bone-side down on a large sheet of foil on a rimmed baking sheet. Tightly tent the ribs with another sheet of foil to create a sealed packet. Roast in the preheated oven for 2 to 2 1/2 hours, until the meat is tender and pulls back slightly from the bone (internal temp ~190–203°F if measuring).

Combine sauce
While ribs roast, combine ketchup, apple cider vinegar, brown sugar, molasses, Worcestershire sauce, Dijon mustard, hot sauce, smoked paprika, minced garlic, minced onion, water, salt, and black pepper in a small saucepan.

When ribs are tender from roasting, carefully open the foil packet and drain any excess fat. Preheat the oven broiler or prepare a hot gas/charcoal grill. Brush a generous layer of the warm BBQ sauce over the exposed meat. If using the oven, move the ribs under the broiler on the top rack for 3–5 minutes until sauce is caramelized and sticky; watch closely to prevent burning. If using a grill, place bone-side down and sear briefly, brushing with more sauce and turning once to caramelize.
