Brew concentrated black tea

Bring 3 cups water to a rolling boil in a small saucepan. Add 3 tsp black tea leaves, reduce heat to low, and simmer for 3–4 minutes to make a strong brew. Remove from heat and steep another 2 minutes, then strain into a heatproof bowl or pitcher. Discard leaves.

Add orange components

While the tea is still warm (but not piping hot), stir in 1 cup fresh orange juice, 1 tbsp orange zest, and 1 tsp fresh lemon juice. Stir to combine so citrus oils and juice integrate into the tea.

Sweeten and balance

Add 3 tbsp granulated sugar and 1 tbsp honey to the warm tea-orange mixture. Stir until completely dissolved. Taste and, if desired, add up to 2 tsp bitters for aromatic depth and to tame sweetness. Allow mixture to cool to room temperature (about 20–30 minutes) or place in the refrigerator for 10–15 minutes to speed cooling.

Finish and serve (Iced or lightly chilled)

Muddle 6 of the mint leaves gently in the bottom of a large pitcher to release aroma (do not shred). Add the cooled tea-orange mixture to the pitcher and stir gently. Fill 4 serving glasses with ice (about 1/2 cup per glass). Pour the tea evenly over the ice. Garnish each glass with 1 thin orange slice, a small sprig of mint (from the remaining leaves), and half a star anise for aroma. If serving slightly warm, omit ice and add garnishes directly to the cups.

Serve immediately. Before serving, taste one glass and adjust: if too tart, add 1 tsp honey to individual glass; if too sweet, add a splash of water or a squeeze of lemon to brighten.
