Method
Tuna Tataki Preparation

Prepare the Tuna
Trim the fresh tuna steak of any sinew or fat. Pat it dry with paper towels.

Marinate the Tuna
In a bowl, combine the soy sauce, sesame oil, rice vinegar, salt, and black and white sesame seeds. Add the tuna steak and let it marinate for about 15 minutes, turning occasionally.

Sear the Tuna
Heat a non-stick skillet over high heat. Remove tuna from marinade and sear each side for about 30 seconds to 1 minute, until the outside is browned but the inside remains raw. Remove from heat and let it rest.

Slice the Tuna
Using a sharp knife, slice the tuna steak into thin slices (about 1/4 inch thick) and arrange them on a serving plate.
Pickled Ginger Relish Preparation

Prepare the Relish
Chop the pickled ginger into small pieces. Thinly slice the green onions.

Mix Ingredients
In a small bowl, combine the chopped pickled ginger, sliced green onions, and lime juice. Mix well.
Garnishing

Add Micro Shiso
Top the sliced tuna with the micro shiso leaves and serve with the pickled ginger relish on the side.
