Fries
Truffle Oil Mixture
Method
Preparing the Fries
- 1
Cut the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick, to create fries.
- 2
Soak the Fries
Place the cut fries in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.
- 3
Dry the Fries
After soaking, drain the fries and pat them dry with a clean kitchen towel to remove as much moisture as possible.
Frying the Fries
- 4
Heat the Oil
In a large deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.
- 5
Fry the Potatoes
Carefully add a handful of dried fries to the hot oil, being cautious not to overcrowd the pot. Fry in batches for about 4-5 minutes or until golden and crispy.
- 6
Drain the Fries
Once fried, remove the fries with a slotted spoon and transfer them to a paper towel-lined plate to drain excess oil. Sprinkle with salt immediately.
Finishing Touches
- 7
Mix the Truffle Oil Mixture
In a large mixing bowl, combine the truffle oil, grated Parmesan cheese, chopped parsley, and freshly ground black pepper. Mix well.
- 8
Toss the Fries
Once all fries are fried and drained, add them to the truffle oil mixture. Toss gently to coat the fries evenly with the mixture.
- 9
Serve
Transfer the truffle fries to a serving platter and enjoy immediately while hot.
