Prep the Ingredients
Peel and devein the shrimp. Clean the scallops, clams, and mussels. Slice the chorizo sausage into thin rounds and dice the chicken breast into bite-sized pieces. Chop the onion, bell pepper, and garlic.

Prepare the Rice
In a large bowl, soak the saffron rice in water for about 30 minutes. Drain well before cooking.

Cook the Chicken and Chorizo
In a large paella pan or a wide skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced chicken and chorizo sausage and cook until the chicken is browned and cooked through, about 5–7 minutes.

Add Rice and Broth
Stir in the soaked saffron rice and pour in the chicken broth. Bring the mixture to a boil, then reduce heat to low and simmer for about 15 minutes.

Add Peas and Season
Stir in the frozen peas, and season with salt and black pepper to taste. Cook for another 2-3 minutes until heated through.

Garnish and Serve
Remove the pan from heat. Squeeze fresh lemon juice over the paella, and let it sit for a few minutes before serving. Serve warm, garnished with additional lemon wedges if desired.
