    Preheat your oven to 180°C (350°F). This will ensure that the frittata cooks evenly.

    Prepare the Seafood

    In a skillet over medium heat, add 1 tablespoon of olive oil. Add shrimp and scallops, cooking until they are just opaque, about 3-4 minutes. Remove from skillet and set aside.

    In the same skillet, add another tablespoon of olive oil. Add diced onion and red bell pepper, sautéing until softened, about 5 minutes. Add the fresh spinach and cook until wilted, about 2-3 minutes. Remove from heat.
