    Season the Short Ribs

    Pat the beef short ribs dry with paper towels and season generously with salt and black pepper on all sides.

    Brown the Ribs

    In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat. Once hot, add the short ribs in batches and brown them on all sides. Remove the ribs and set aside.

Cooking

    Sauté Vegetables

    In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until they soften. Add the minced garlic and cook for an additional 1 minute, stirring frequently.

    Add Tomato Paste

    Stir in the tomato paste and cook for 2 minutes to incorporate it with the vegetables.

    Deglaze with Wine

    Pour in the red wine, scraping the bottom of the pot to release any browned bits. Bring the mixture to a boil and let it simmer for 5 minutes.

    Add Broth and Herbs

    Return the browned short ribs to the pot. Add the beef broth, thyme sprigs, and bay leaf. Ensure the ribs are mostly submerged in the liquid.

    Braise the Ribs

    Cover the pot, reduce the heat to low, and let it simmer gently for about 3 hours, or until the ribs are tender and falling off the bone.

Serving

    Once cooked, remove the short ribs from the pot and let them rest for 10 minutes before serving. Skim off any excess fat from the sauce and serve the ribs with the braising liquid poured over the top.
