Method
Calamari Preparation
- 1
Prepare the Calamari
In a large bowl, combine the cleaned and cut calamari with buttermilk. Allow to marinate for at least 30 minutes.
- 2
Mix the Dry Ingredients
In a separate bowl, mix together the flour, cornstarch, salt, black pepper, paprika, and garlic powder.
- 3
Coat the Calamari
After marinating, remove the calamari from the buttermilk and allow excess liquid to drip off. Dredge the calamari in the flour mixture until fully coated.
- 4
Heat the Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 5
Fry the Calamari
Carefully add the coated calamari to the hot oil in small batches. Fry for about 2-3 minutes or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Dipping Sauce
- 6
Make the Dipping Sauce
In a small bowl, combine mayonnaise, Sriracha sauce, lemon juice, minced garlic, and salt to taste. Mix well until smooth.
- 7
Serve
Serve the fried calamari hot with the dipping sauce on the side.
