Cooking Pasta

    Boil the Water

    In a large pot, bring 4 cups of water to a boil. Add 1 tsp of salt.

    Cook the Pasta

    Once the water is boiling, add 2 cups of pasta. Cook according to package instructions, usually about 8-10 minutes, until al dente.

    Drain and Cool

    After the pasta is cooked, drain it in a colander and rinse under cold water to stop the cooking process. Set aside to cool.

Preparing Vegetables

    Chop Vegetables

    While the pasta is cooking, chop the cherry tomatoes in half, dice the cucumber, and finely chop the red bell pepper and red onion.

    Prepare Fresh Basil

    Wash and gently pat dry the fresh basil leaves, then tear them into smaller pieces.

Mixing the Salad

    Combine Ingredients

    In a large bowl, combine the cooled pasta, chopped vegetables, and fresh basil.

    Add Seasoning

    Drizzle 3 tablespoons of olive oil and 2 tablespoons of balsamic vinegar over the salad. Season with 1 tsp of black pepper.

    Add Feta Cheese

    Crumble 1 cup of feta cheese over the top of the salad.

    Toss the Salad

    Gently toss all the ingredients together until well mixed.

Serving

    Chill the Salad

    For best flavor, let the salad sit in the refrigerator for at least 30 minutes before serving.
