Place the quinoa in a fine-mesh strainer and rinse it under cold water for about 2 minutes. This helps to remove the saponins that can give quinoa a bitter taste.

In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and all the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Fluff the Quinoa
After the quinoa has rested, use a fork to fluff it gently before transferring it to a large bowl.
Preparation of Vegetable Medley

Chop Vegetables
While the quinoa is cooking, prepare the vegetable medley by chopping the cherry tomatoes, cucumber, red bell pepper, and red onion into bite-sized pieces. Add them to the bowl with the fluffed quinoa.

Finely chop the fresh parsley and add it to the bowl with the other vegetables and quinoa.
