Preparation of Scallops

    Cleaning the Scallops

    Rinse the fresh native scallops under cold running water. Remove any grit or sand by gently rubbing them with your fingers.

    Seasoning

    Pat the scallops dry with a paper towel. Season both sides with salt and black pepper.

    Searing the Scallops

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the scallops in a single layer and sear for about 2-3 minutes on each side until they are golden brown and just cooked through. Remove from the skillet and set aside.

Preparation of Sauce

    Making the Sauce

    In the same skillet used for the scallops, reduce the heat to medium and add the butter. Allow it to melt, then add the minced garlic. Sauté for about 1 minute until fragrant.

    Adding Liquids

    Stir in the lemon juice and white wine. Bring to a simmer and let it cook for about 3-4 minutes until the sauce slightly thickens.

    Finishing Touches

    Stir in the chopped parsley and red pepper flakes. Return the scallops to the skillet and coat them in the sauce. Cook for an additional minute to heat through.
