Prepare the Chocolate Filling

Melt the Chocolate
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chopped semi-sweet chocolate to the pan, stirring until smooth and fully melted. Pour the mixture into a small dish and refrigerate until firm, about 1 hour.

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

In a separate bowl, beat the eggs and then add the milk and melted unsalted butter. Mix until smooth.

Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix.
Shape the Beignets

Take a small amount of the dough (about 1 tablespoon) and flatten it in your hand. Place about half a teaspoon of the chilled chocolate filling in the center and fold the dough over to seal. Roll gently into a ball.

In a large heavy pot or deep fryer, heat the vegetable oil to 350°F (175°C).
