    Prepare the Seafood

    Rinse the shrimp, mussels, clams, and squid under cold water. Pat dry with paper towels and set aside.

    Prepare the Broth

    In a saucepan, heat the chicken or seafood broth until simmering. Add saffron threads and let steep for 10 minutes.

    Sauté Vegetables

    In a large paella pan or skillet, heat olive oil over medium heat. Add chopped onion, diced red bell pepper, and minced garlic. Sauté until the onion is translucent.

    Add Tomato and Spices

    Stir in the diced tomato, paprika, salt, and black pepper. Cook for another 2 minutes until the tomato softens.

    Incorporate Rice

    Add the Bomba or Arborio rice to the pan, stirring to coat the rice with the vegetable mixture. Toast the rice for about 2 minutes.

    Add Broth

    Pour in the warmed broth, stirring to combine. Bring the mixture to a gentle boil.

    Add Seafood

    Reduce heat to low and arrange the prepared seafood on top of the rice. Do not stir. Cover the pan and let it cook for 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.

Serving

    Once cooked, remove from heat and let it rest for 5 minutes. Garnish with fresh parsley and lemon wedges. Serve hot.
