Pasta Preparation

    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    In a large saucepan, melt the unsalted butter over medium heat. Stir in the all-purpose flour and cook for about 2 minutes, stirring constantly until golden.

    Gradually whisk in the whole milk, making sure there are no lumps. Continue to cook, stirring frequently, until the mixture thickens and begins to bubble.

    Reduce heat to low and add the sharp cheddar, Gruyère, and cream cheese. Stir until all the cheese is melted and the sauce is smooth.
