Cook Quinoa
Rinse 1 cup of quinoa under cold water. In a medium saucepan, bring 2 cups of vegetable broth to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and all the liquid is absorbed. Remove from heat and let it cool.

Prepare Vegetables
While the quinoa is cooking, chop the cherry tomatoes in half, dice the cucumber and red bell pepper, and slice the avocado. Finely chop the fresh cilantro and set aside.

Mix Ingredients
In a large bowl, combine the cooked quinoa with the chopped cherry tomatoes, cucumber, red bell pepper, avocado, and cilantro. Gently toss to combine.

Prepare Dressing
In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of lime juice, and 1 tablespoon of honey. Season with salt and black pepper to taste.

Dress the Salad
Pour the dressing over the quinoa and vegetable mixture. Toss gently to coat all ingredients evenly with the dressing.
