Preparation of Gelato Base

    Heat the Dairy

    In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until just below boiling, stirring frequently.

    Whisk Egg Yolks and Sugar

    In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick.

    Temper the Egg Mixture

    Slowly pour about half of the hot milk mixture into the egg yolk mixture, whisking constantly. This is to temper the eggs and prevent them from scrambling.

    Combine and Cook

    Pour the tempered egg mixture back into the saucepan with the remaining milk mixture. Cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon, about 5-7 minutes.

    Add Flavoring

    Remove the saucepan from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature, then refrigerate for at least 4 hours or overnight.

Churning and Flavoring

    Churn the Base

    Once the gelato base is chilled, pour it into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

    During the last few minutes of churning, add the chocolate chips to incorporate them evenly.

    Swirl in Nutella

    Once the gelato is churned, gently swirl in the Nutella for a marbled effect.
