Preparation
- 1
Clean the Oysters
Rinse the Pacific oysters under cold running water to remove any sand or debris. Use a brush to scrub the shells gently.
- 2
Shuck the Oysters
Using an oyster knife, carefully open each oyster by inserting the knife into the hinge of the shell and twisting to pop it open. Remove the oyster from the shell and place it on a plate, discarding the top shell.
Batter Preparation
- 3
Mix Dry Ingredients
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Whisk together until well combined.
- 4
Add Water
Gradually add the cold water to the dry ingredients, whisking until the batter is smooth and slightly thick.
Frying
- 5
Heat the Oil
In a large, deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles, the oil is ready.
- 6
Coat the Oysters
Dip each shucked oyster into the batter, ensuring it is fully coated.
- 7
Fry the Oysters
Carefully place the battered oysters into the hot oil, a few at a time, avoiding overcrowding. Fry for about 3-4 minutes or until they are golden brown and crispy.
- 8
Drain and Serve
Using a slotted spoon, remove the fried oysters from the oil and place them on a plate lined with paper towels to drain excess oil. Serve immediately with lemon wedges and a sprinkle of fresh parsley.
