1. Prepare the Seafood

Rinse the shrimp, scallops, and fish fillets under cold water. Pat them dry with paper towels. For the lobster tails, use kitchen shears to cut down the top of the shell and remove the meat, keeping it intact if possible.

In three separate shallow dishes, place the flour, beaten eggs mixed with milk, and cornmeal mixed with Old Bay seasoning, salt, and pepper. Make sure to season the cornmeal well.

3. Coat the Seafood

Take each piece of seafood, first dredge it in the flour, then dip into the egg mixture, and finally coat with the seasoned cornmeal. Ensure each piece is well coated.

4. Heat the Oil

In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). To test if the oil is ready, drop in a small piece of bread; it should sizzle and turn golden brown.

5. Fry the Seafood

Carefully add the coated seafood to the hot oil in batches, avoiding overcrowding. Fry for about 3-4 minutes for shrimp, 4-5 minutes for scallops, and 5-6 minutes for fish until golden brown and cooked through. The lobster tails may take about 5-7 minutes.

6. Drain and Serve

Once cooked, remove the seafood with a slotted spoon and place on a plate lined with paper towels to drain excess oil. Serve hot with lemon wedges on the side.
