Method
Preparing the Fish Batter
- 1
Mix the Dry Ingredients
In a large mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Whisk together until well combined.
- 2
Add the Sparkling Water
Gradually add the cold sparkling water to the dry ingredients, whisking until you have a smooth batter. It should be thick enough to coat the back of a spoon.
Preparing the Chips
- 3
Cut the Potatoes
Peel and cut the potatoes into thick chips (about 1/2 inch wide).
- 4
Soak the Chips
Place the cut chips in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.
- 5
Dry the Chips
Drain the chips and pat them dry with a clean kitchen towel to remove excess moisture.
Frying the Chips
- 6
Heat the Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 7
Fry the Chips
Carefully add the chips to the hot oil in batches, frying for about 5-7 minutes until they are golden brown and cooked through. Remove with a slotted spoon and drain on paper towels. Season with salt to taste.
- 8
Keep Warm
Place the fried chips in a warm oven while you cook the fish.
Frying the Fish
- 9
Heat the Oil
In a separate pot, heat enough vegetable oil for deep frying to 350°F (175°C).
- 10
Coat the Fish
Dip each fish fillet into the batter, allowing any excess to drip off.
- 11
Fry the Fish
Carefully place the battered fish into the hot oil, frying for about 4-5 minutes on each side until golden brown. Remove with a slotted spoon and drain on paper towels.
Serving
- 12
Plate the Dish
Serve the fish and chips hot, drizzling malt vinegar over the top and offering tartar sauce on the side.
