Crust Preparation

    Prepare the crust

    In a mixing bowl, combine graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the crumbs are evenly coated and moistened.

    Form the crust

    Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in a preheated oven at 350°F (175°C) for 8-10 minutes or until lightly golden. Remove from oven and allow to cool.

Filling Preparation

    Mix the filling

    In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth. Gradually add granulated sugar and continue to mix until combined.

    Incorporate other ingredients

    Add vanilla extract and sour cream to the mixture, mixing well. Add eggs one at a time, mixing just until blended after each addition.

    Pour in the crust

    Pour the cream cheese mixture over the cooled crust in the springform pan, spreading it evenly.

    Bake the cheesecake

    Bake in the preheated oven at 350°F (175°C) for 45-50 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour.

    Remove from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight before serving.

Topping Preparation

    Prepare the topping

    Just before serving, wash the fresh berries and pat them dry. In a small bowl, toss the berries with powdered sugar to coat lightly.

    Remove the cheesecake from the springform pan, slice, and top each slice with a generous amount of the sugared berries and garnish with fresh mint leaves.
