Pumpkin White Chocolate Biscotti

Prepare the Dough
In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, ground cinnamon, and mix well. In another bowl, whisk together the pumpkin puree, eggs, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until well combined. Fold in the white chocolate chips.

Shape and Bake
Preheat the oven to 350°F (175°C). Divide the dough into two logs, about 12 inches long and place them on a parchment-lined baking sheet. Bake for 25-30 minutes or until golden brown. Allow to cool for 10 minutes.

Slice and Finish Baking
Reduce the oven temperature to 325°F (160°C). Slice the logs diagonally into 1-inch wide pieces. Lay them flat on the baking sheet and bake for an additional 15-20 minutes until crisp.

Cream the Butter and Sugars
In a large bowl, cream together the softened butter, brown sugar, and instant coffee granules until fluffy. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract.

Combine Dry Ingredients
In another bowl, whisk together the almond flour and baking soda. Gradually add the dry mixture to the wet mixture, stirring until just combined. Fold in the chocolate chips.

Scoop and Bake
Preheat the oven to 350°F (175°C). Using a cookie scoop, drop rounded tablespoons of dough onto a parchment-lined baking sheet. Bake for 12-15 minutes until edges are golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

In a bowl, cream together the softened butter, sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract, then mix in the dulce de leche until well combined.

In a separate bowl, whisk together the all-purpose flour, cocoa powder, and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
