For the Confit Chicken

    Prepare the Chicken

    In a large saucepan, combine the chicken thighs, olive oil, crushed garlic, thyme, salt, and black pepper. Make sure the chicken is fully submerged in oil.

    Cook the Chicken

    Heat the saucepan over low heat. Allow the chicken to confit for about 2 hours or until it is tender and fully cooked. Stir occasionally to ensure even cooking.

    Cool and Shred

    Once cooked, remove the chicken from the oil and let it cool. Shred the chicken with two forks and set aside.

For the Blackened Shrimp

    Prepare the Shrimp

    Toss the peeled and deveined shrimp in Cajun seasoning, ensuring they are evenly coated.

    In a skillet, heat olive oil over medium-high heat. Once hot, add the seasoned shrimp and cook for 2-3 minutes on each side, or until they are opaque and cooked through.

For the Tostadas

    In a separate skillet, heat oil over medium heat. Fry each corn tortilla until golden and crispy, about 1-2 minutes on each side. Drain on paper towels.
