Preparation

    Clean the Clams

    Rinse the cherrystone clams under cold running water to remove any sand or debris. Scrub the shells with a brush if necessary.

    Mince the Garlic and Chop the Parsley

    Peel and mince the garlic cloves finely. Chop the fresh parsley leaves. Set aside.

    Prepare the Lemon

    Cut the lemon in half. Squeeze the juice from one half and slice the other half into wedges for serving.

Cooking

    Heat Olive Oil

    In a large skillet or pot, heat 3 tablespoons of olive oil over medium heat.

    Sauté Garlic

    Add minced garlic to the skillet and sauté for about 1 minute until fragrant but not browned.

    Add Clams and White Wine

    Add the cleaned cherrystone clams to the skillet, followed by 1 cup of white wine. Stir gently to combine.

    Season and Cook

    Sprinkle in the red pepper flakes, salt, and black pepper. Cover the skillet and cook for 5-7 minutes, or until the clams have opened. Discard any that do not open.

    Finish with Parsley and Lemon Juice

    Remove the skillet from heat. Stir in the chopped parsley and the juice from the squeezed lemon half.

Serving

    Serve the cherrystone clams in a large bowl or platter. Drizzle with the cooking liquid from the skillet.
