Preparation of Botanicals

    In a large bowl, combine the dried wormwood, hyssop, lemon balm, peppermint, sage, thyme, fennel seeds, and coriander seeds. Mix well to ensure an even distribution of all the herbs.

    Place the mixed herbs in a large glass jar. Pour the high-proof grain alcohol over the herbs, ensuring they are fully submerged. Seal the jar tightly and let it sit in a dark, cool place for 4 to 6 weeks. Shake the jar gently every few days to agitate the mixture.

    Strain the Mixture

    After the infusion period, strain the alcohol through a fine mesh sieve or cheesecloth into a clean container to remove the solid herbs. Discard the solids.

    Add Simple Syrup and Water

    In a separate bowl, mix the simple syrup and water together. Gradually add this mixture to the strained herbal infusion, stirring well to combine.

    If making Chartreuse Jaune, add 5 drops of natural yellow food coloring to the mixture. Stir until the color is evenly distributed.

Bottling and Storage
