Prepare the Cream
In a medium saucepan, combine the heavy cream and 1 cup of granulated sugar. Split the vanilla bean lengthwise, scrape the seeds into the cream mixture, and add the bean pod as well. Heat over medium heat until the mixture is steaming, but do not bring it to a boil. Remove from heat and let it infuse for about 15 minutes.

Mix the Egg Yolks
In a large mixing bowl, whisk together the egg yolks until they are light and frothy. Gradually add the warm cream mixture to the egg yolks, whisking continuously to temper the yolks and prevent them from curdling.

Add Bourbon
Stir in the bourbon to the custard mixture until well combined. Remove the vanilla bean pod from the mixture.

Bake
Bake in the preheated oven for 30-35 minutes, or until the custard is set but still slightly jiggly in the center. Remove from the oven and let cool in the water bath for 10 minutes. Then, remove the ramekins and let them cool to room temperature before refrigerating for at least 2 hours, or overnight.

Caramelize the Sugar
Once chilled, sprinkle about 1 teaspoon of granulated sugar evenly over the top of each custard. Using a kitchen torch, carefully caramelize the sugar until it melts and turns golden brown. If you don’t have a torch, you can place the ramekins under the broiler for 1-2 minutes, watching closely to avoid burning.
