    In a medium bowl, combine the bay scallops with fresh lime juice and lemon juice. Ensure the scallops are fully submerged in the juice. Cover and refrigerate for 30 minutes to 'cook' the scallops in the citrus juice.

    While the scallops are marinating, finely chop the red onion, cucumber, tomato, and jalapeño pepper. Make sure to remove seeds from the jalapeño to control the heat level.

    After 30 minutes, remove the scallops from the refrigerator. Drain excess citrus juice, leaving a little to keep the ceviche moist. Mix in the chopped vegetables: red onion, cucumber, tomato, and jalapeño pepper, along with the chopped cilantro. Season with salt and black pepper to taste.
