Prepare the Dough
In a large mixing bowl, combine all-purpose flour, granulated sugar, and salt. Add the unsalted butter and mix until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

Prepare the Filling
In a large bowl, toss the sliced apples with granulated sugar, cinnamon, lemon juice, and cranberries until well combined. Set aside to allow the flavors to meld.

Make the Caramel Sauce
In a medium saucepan over medium heat, melt the granulated sugar, stirring constantly until it becomes a golden brown liquid. Carefully add the unsalted butter and stir until melted. Slowly pour in the heavy cream while stirring, then add ground cinnamon and nutmeg. Cook for an additional minute, then remove from heat and let cool slightly.

Assemble and Bake
Preheat the oven to 375°F (190°C). Roll out the chilled crostata dough on a floured surface into a 12-inch circle. Transfer to a parchment-lined baking sheet. Place the apple filling in the center, leaving a 2-inch border. Fold the edges of the dough over the filling, pleating as necessary. Bake for 40-45 minutes or until the crust is golden and the apples are tender.

Allow the crostata to cool slightly before slicing. Serve warm with scoops of vanilla ice cream on the side and drizzle with spiced caramel sauce.
