Cooking Noodles

Boil Water
In a large pot, bring 4 cups of water to a boil over high heat. Add 1 tsp of salt to the water.

Cook Noodles
Once the water is boiling, add 8 oz of spaghetti or udon noodles to the pot. Cook according to package instructions until al dente, usually about 8-10 minutes.

Drain Noodles
Once cooked, drain the noodles in a colander and rinse them under cold water to stop the cooking process.
Preparing Ahi Topping

Prepare Ahi Tuna
While the noodles are cooking, season the 8 oz of ahi tuna steak with 2 tbs of soy sauce, 1 tbs of sesame oil, 1 tbs of lime juice, and 1 tsp of grated ginger in a small bowl. Let it marinate for about 5 minutes.

Sear Ahi Tuna
Heat a non-stick skillet over medium-high heat. Once hot, add the marinated ahi tuna steak and sear for about 1-2 minutes on each side, until the outside is golden brown but the inside remains rare. Remove from heat and let it rest for a minute before slicing.
Assembling Dish

Plate Noodles
Divide the cooked noodles among serving plates.

Add Ahi and Garnish
Top each plate of noodles with sliced ahi tuna. Sprinkle with 1 tbs of black sesame seeds and garnish with sliced green onions and seaweed salad if desired.
